Sourcing & Ingredients

We believe every guest deserves to know exactly what is on the plate. This page explains our sourcing, allergen handling, and halal marking - plainly.

Where things come from

Seafood

Fish, squid, and shellfish are selected at the Jepara morning auction and from Karimunjawa waters (in this fiction - and that is exactly how your real restaurant would write it). They reach the pawon before nine, rest on shaved ice, and never stay overnight twice.

Coffee

Single-origin beans from Indonesian farmers and cooperatives - Gayo, Toraja, Flores, Kerinci, Temanggung - roasted light every week.

Produce and spice

Jepara's morning market and spice gardens on the Muria slopes. Palm sugar and coconut from local artisans.

Allergens

Eleven common allergens are marked on every item, and the menu filter can exclude them. Everything is prepared under one roof - we cannot reduce cross-contact to zero, so always tell the team about allergies when reserving and when you arrive. For severe allergies, we set aside separate cookware as far as this small kitchen honestly can.

Halal and non-halal marking

The JEO PAWON kitchen and coffee bar use no forbidden ingredients: no pork, no alcohol in cooking, no mirin or cooking wine. But because we share a roof with an 18+ bar that serves alcohol, JEO PAWON does NOT claim a halal certificate for the venue - and per-item halal marks on our menu are ingredient information, not certification claims. Items containing alcohol carry a red NON-HALAL notice, as mandated by Indonesian Law No. 33 of 2014. The 18+ bar's glassware and tools are washed and stored separately from kitchen equipment.
